How to Make Delicious Panini

Having turkey leftovers? This is the week to make delicious turkey sandwiches and panini.
I am not sure about you, but I am resting this week after Thanksgiving and ALL I can think of is how I can procrastinate and use our turkey leftovers! Hence this post...

To make delicious panini:

In order for your panini to be tasty and delicious, you need to make it with good bread. It is the bread that makes or breaks the panini. If you have a good bread to start with, whichever ingredient you decide to put in the panini it will turn out tasty. Make sure that the bread is fresh but not too soft in texture. I go to a local bakery and get fresh bread for making panini. Specialized stores are also good at making recommendations based on what you would use the bread for. It always makes a big difference.

Cut the bread slices a big thinker. The store-bought breads that are pre-sliced are a bit too thin.

You need to have a good sandwich press.  If you don't have a panini press you cam also pan fry it for a bout 4-5 min each side. while gently pressing the top slice of the bread so that the two pieces are tight together.

Turkey Leftover Panini

2 tomatoes
4 oz cheese (any kind)
8 oz turkey breast
8 slices bread

Cut the tomatoes and turkey. Put a slice of cheese on each bread, then layer two slices of tomatoes and turkey.  Cover with another slice of bread and put in the panini press for about 5 min. Serve while hot.
I love tomatoes and I wanted to cut down cheese after the big Thanksgiving dinner, this is why there is more tomatoes in this particular panini. You can assemble based on your preference.

Mmmmm!! I actually wouldn't have thought of that...we've just been having turkey subs, but that sounds like a really tasty variation of leftovers!
