I like preparing this butternut squash salad around this time of the year. It is healthy, easy, and delicious! It can be a great recipe to entertain. At the same time it can be made quickly for a family dinner. Simply add chicken breast to the salad to make it a main meal.
You may decide to prepare a bigger portion for guests. You may also wish to add extra dressing. In that case, you can make more dressing while keeping the same ratio between olive oil and white wine vinegar.
Put the greens in a bowl. Dress them with the salad dressing. Roast the butternut squash. Add to the greens. Sprinkle goat cheese on top.
I am not adding the specific amount of goat cheese. You can just sprinkle it on top or add more to the salad. This will depend on your taste and how healthy/light you want the salad to be.
