Healthy Apple Bread Recipe

November 6, 2013 | 13 Comments

My hubby loves healthy apple breads and deserts. I love quick breads that I can enjoy with coffee in the morning. This recipe fills the needs for both if us!
This is a healthy(er) apple bread recipe. It uses almond flour. You can make it with either whole wheat or all purpose flour.  Not in a mood for apples around the holidays? Pin the recipe for later baking!

Ingredients:

1 cup all purpose flour (or whole wheat flour)
2/3 cup almond meal flour (or extra 2/3 flour)
4 (full) tablespoons of yoghurt
1 cup brown sugar
2 eggs
1 teaspoon cinnamon
1 and 1/2 teaspoon vanilla extract
1 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 cup olive oil
1 cup shredded granny smith apples (about 4-5 medium sized apples)
1 tablespoon cocoa powder
1/2 cup chopped walnuts (optional)var r = document.URL;

Directions: Preheat oven to 350 degrees. Mix all dry ingredients together. Add the wet ingredients and stir until the batter is mixed. Don’t over-mix.
Grease a 3 x 8 inch or 8 inch round pan. Poor the batter. Bake for 60 min. To know that it is done, stick a toothpick into the top. If it comes out clean, then the bread is baked. Let cool a couple of hours before cutting.
Enjoy!

That looks really good. I don't know why I don't make breads more often. I tend to burn cookies, but I actually do ok with breads. I need to try this!

Vickie and Annie, thank you for your comments. I have also been experimenting with almond flour and coconut flour as so far I am loving it. I love to be able to make a small treat that is also healthier.
