I had a lecture with students from the University of New Mexico this past Friday. I was going to teach a demo lesson in front of them and talk to them about my teaching ideas and concepts beforehand. I had prepared for the lecture but still I was getting quite nervous about the presentation. So I decided that the my three step approach would be to: make them comfortable, feed them, and then teach! It happened to be my mom’s Birthday that same day so I made something that I know she likes – pumpkin bar.
Well…it worked! The presentation was successful and very friendly. And the pumpkin bread must have been good because after I was finished with he demo lesson there was not even one piece left. Not even the paper plate…it was all gone. I take it they have liked it.
The recipe is extremely easy to make. However, I did add one extra ingredient that I feel helped making it extra fluffy and moist! Have you used Almond Meal Flour? I buy mine from Trader Joe’s. I substitute 1/3 of the flour with almond meal.
If you don’t have it or it is not easy to get, you can simply do it with regular flour. You will still have a great result!
Directions: Mix the dry ingredients. Add the wet ingredients. Stir until the batter is event. Grease a 3 x 8 inch baking pan and pour the batter. You can also use a 8 inch round pan. Bake on 350 degrees for 60 min (baking times may vary slightly depending on your oven and altitude). To know that it’s done you can stick a toothpick into the top. You want to see that the toothpick comes out clean. I have even a better way of doing it – I get so impatient that I get a small piece from the top (as you can see on the picture and one of the pieces) while still hot and try it (I know…).
Extra Twist and Flavor: Add banana for a Banana-Pumpkin bread! I don’t know if it’s just me, but I love sneaking in bananas into most bread recipes. If you want even richer and interesting taste, instead of a whole cup of pumpkin puree use just half of it and add one to two mashed bananas. Try it! The banana balances the tastes of the cocoa and pumpkin. You will love it!
